A Canadian classic! The nutty coconut base pairs so wonderfully with the sweet custard layer…. and the chocolate on top just seals the deal.

Ingredients

Coconut Graham Base

  • ¼ cup chocolate chips
  • ½ cup butter
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups graham cracker crumbs
  • 1 cup flaked coconut
  • ½ cup walnuts chopped

Custard Layer

  • 3 tbsp custard powder
  • ¼ cup milk
  • cup butter melted
  • 2 ½ cups icing sugar

Chocolate Top

  • ½ cup chocolate chips
  • 1 tbsp butter

Instructions

Coconut Graham Base

  • Heat oven to 350F.
  • In a large bowl, microwave ¼ cup chocolate chips with ½ butter for 2 minutes. Stir until well combined.
  • Add egg and vanilla to melted chocolate. Stir in graham cracker crumbs, flaked coconut and chopped walnuts.
  • Press mixture into 9" square baking pan. Bake for 8 minutes and then allow to cool completely.

Custard Layer

  • In a medium bowl, whisk custard powder and milk. Add ¼ cup of melted butter, continue whisking until combined.
  • ½ cup at a time, slowly add in icing sugar.
  • Spread custard evenly over cooled base layer. Refrigerate for at least 15 minutes, until custard is set.

Chocolate Top

  • In a small bowl, microwave ½ cup of chocolate chips with 1 tbsp of butter. Stir until well combined.
  • Spread chocolate evenly over custard layer. Refrigerate for at least 15 minutes, until chocolate is hardened.
  • Cut into bars. Enjoy 🙂
